I like to double the recipe and then freeze the extra broth in an ice tray. This is a great way to always have the broth on hand for incorporating into other recipes. Excellent recipe to use in a large variety of Japanese dishes. We used to make Japanese egg custard chawan mushi and it was terrific. Excellent base for miso soup.
